Ingredients:
- 2 sirloin steaks (about 1 inch thick)
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced into half-moons
- 1 red onion, sliced
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
- Marinate the Steaks: In a small bowl, whisk together balsamic vinegar, honey, and minced garlic. Pour half of this mixture over the steaks, letting them marinate for at least 15 minutes.
- Cook the Veggies: In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the bell peppers, zucchini, and red onion. Sauté for 5-7 minutes until tender-crisp, then remove from the skillet and set aside.
- Sear the Steaks: In the same skillet, add another 1 tbsp of olive oil. Remove the steaks from the marinade and sear them for 3-4 minutes per side, or until they reach your desired doneness. Remove the steaks from the skillet and let them rest.
- Glaze and Serve: Reduce the heat to medium, add the remaining balsamic mixture to the skillet, and simmer until slightly thickened. Return the veggies to the skillet, toss to coat in the glaze, and then slice the steaks against the grain.
- Garnish and Enjoy: Serve the sliced steak over the glazed veggies, garnishing with fresh basil for a burst of freshness.
