Ingredients:

  • 1 Whole Chicken
  • Salt and pepper to taste
  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh chopped parsley or cilantro for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions:

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 375-400°F / 190-200°C).
  3. Make the BBQ Sauce Mixture:
    • In a small bowl, whisk together the BBQ sauce, olive oil, honey, paprika, garlic powder, and onion powder until well combined. This will be used as both a marinade and basting sauce for the chicken.
  4. Marinate the Chicken:
    • Place the chicken thighs in a shallow dish or resealable plastic bag. Pour half of the BBQ sauce mixture over the chicken, making sure each piece is well coated. Reserve the remaining sauce for basting.
  5. Grill the Chicken:
    • Place the chicken thighs on the preheated grill, skin-side down. Close the lid and cook for 5-7 minutes.
  6. Baste and Flip:
    • After 5-7 minutes, baste the top side of the chicken thighs with some of the reserved BBQ sauce mixture using a brush.
    • Flip the chicken thighs using tongs and baste the other side with more sauce. Close the lid and continue grilling for another 5-7 minutes.
  7. Check for Doneness:
    • Continue grilling the chicken thighs, flipping and basting occasionally, until they reach an internal temperature of 165°F (75°C) and the juices run clear, about 15-20 minutes in total.
  8. Rest and Serve:
    • Once cooked through, transfer the BBQ chicken thighs to a platter and let them rest for a few minutes.
    • Garnish with fresh chopped parsley or cilantro if desired, and serve hot with lemon wedges on the side for a burst of freshness.

I think marinating the chicken before grilling adds tons of flavor. Though, don't forget to pat it dry before putting it on the BBQ to avoid flare-ups! 🔥🍗
