Hey everyone, I want to introduce you to a comforting and easy Beans and Rice Recipe! 🌾🍛 This dish is packed with flavor, combining tender rice with hearty beans, fresh veggies, and spices. Perfect for any meal! 🍴🌿

Ingredients:
  • 1 cup rice (white or brown)

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
Instructions:
  1. Cook the Rice:
    • In a medium pot, bring 2 cups of broth to a boil.
    • Add the rice, reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed (about 18-20 minutes for white rice, 40-45 minutes for brown rice).
  2. Sauté Vegetables:
    • While the rice is cooking, heat olive oil in a large skillet over medium heat.
    • Add the chopped onion and bell pepper, cooking until they are soft (about 5 minutes).
    • Add the minced garlic and cook for another minute.
  3. Combine Ingredients:
    • Stir in the black beans, diced tomatoes (with their juice), cumin, chili powder, salt, and pepper.
    • Cook for about 5-7 minutes, until heated through and flavors are well combined.
  4. Mix and Serve:
    • Once the rice is done, fluff it with a fork and add it to the skillet with the bean mixture.
    • Stir well to combine and heat through.
  5. Garnish:
    • Serve hot, garnished with fresh cilantro and lime wedges if desired.
