Ingredients
  • 1 sheet puff pastry, thawed
  • 2 roasted beets, thinly sliced
  • 1/2 cup goat cheese
  • 2 tablespoons honey
  • 1 teaspoon chopped fresh thyme
Directions
  1. Preheat oven to 375°F (190°C). Cut puff pastry into 3-inch circles.
  2. Arrange beet slices on the pastry, leaving a small border. Crumble goat cheese over the top.
  3. Bake for 15-20 minutes until golden brown. Drizzle with honey and sprinkle with thyme.
 
I think beet and goat cheese is such a perfect combo! The earthy sweetness of the beets pairs so well with the tangy goat cheese, though I might add a drizzle of honey for extra sweetness. 🧀🍯
