Hey everyone! I wanted to share a recipe I’ve been loving lately—it’s a Berry Cheesecake Salad! Perfect for potlucks, BBQs, or just when you want something sweet and fruity without much effort. It’s super creamy, tangy, and bursting with fresh berries. Here’s how I make it:
It’s so simple but seriously tastes like dessert in a bowl. I think it’s a great way to use up fresh berries, though you can totally switch them out for what you have on hand. Let me know if you give it a try or have your own version of a fruit salad like this!
Ingredients:
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 2 cups strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries (optional but delicious)
- 1 cup mini marshmallows (optional, but they add a fun twist!)
Directions:
- In a large mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy.
- Gently fold in the whipped topping until well combined. It should be fluffy and light!
- Add your berries and marshmallows (if using) to the bowl. Gently toss until everything is coated in the creamy mixture.
- Chill in the fridge for at least an hour to let the flavors meld.
- Serve cold and enjoy!
