One of the most famous dishes in the Philippines is pork cooked in coconut milk and flavored with shrimp paste and chili peppers. Most Filipinos definitely have this in their top 5 favorite dishes and today, I wanna share with you the recipe in making Bicol Express. šŸ˜‹

Bicol Express Recipe​

Ingredients:​

  • 500g pork belly, thinly sliced
  • 2 tablespoons shrimp paste (bagoong)
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 3-4 Thai chili peppers (siling labuyo), chopped (adjust to taste)
  • 2-3 long green chili peppers (siling pansigang), sliced diagonally
  • 1 can (400ml) coconut milk
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:​

  1. Prepare the Pork:
    • Heat the vegetable oil in a large skillet or wok over medium heat.
    • Add the minced garlic and chopped onion to the skillet. SautĆ© until fragrant and translucent.
  2. Cook the Pork:
    • Add the thinly sliced pork belly to the skillet. Cook until the pork is browned and caramelized on the edges.
  3. Add the Shrimp Paste and Chili Peppers:
    • Stir in the shrimp paste (bagoong) and chopped Thai chili peppers (siling labuyo). Cook for 1-2 minutes to allow the flavors to meld.
  4. Simmer with Coconut Milk:
    • Pour in the coconut milk, stirring well to combine with the pork mixture.
    • Add the sliced long green chili peppers (siling pansigang) to the skillet. Bring the mixture to a gentle simmer.
  5. Cook Until Pork is Tender:
    • Cover the skillet and let the Bicol Express simmer for about 20-25 minutes, stirring occasionally, until the pork is tender and the flavors have developed.
  6. Adjust Seasoning:
    • Taste the Bicol Express and adjust the seasoning with salt and pepper as needed. Add more chili peppers for extra heat, if desired.
  7. Serve:
    • Once the pork is tender and the sauce has thickened to your liking, remove the skillet from heat.
    • Transfer the Bicol Express to a serving dish.
    • Serve hot with steamed rice on the side.
