Ingredients:

  • 2 chicken breasts, thinly sliced
  • 4-5 baby bok choy heads, chopped
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Cooked rice or noodles (optional, for serving)
Instructions:

  1. In a large pot, heat a little oil over medium heat. Add minced garlic and grated ginger, sauté for a minute until fragrant.
  2. Add thinly sliced chicken breasts to the pot and cook until they are no longer pink.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in soy sauce and fish sauce (if using). Season with salt and pepper to taste.
  5. Add chopped baby bok choy to the pot and cook for a few minutes until wilted and tender.
  6. Once the bok choy is cooked, taste the soup and adjust seasoning if necessary.
  7. Serve the Bok Choy Chicken Soup hot, garnished with chopped green onions. You can also serve it over cooked rice or noodles if desired.
