Have some great tasting soup!

- 2 chicken breasts, thinly sliced
- 4-5 baby bok choy heads, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Cooked rice or noodles (optional, for serving)
- In a large pot, heat a little oil over medium heat. Add minced garlic and grated ginger, sauté for a minute until fragrant.
- Add thinly sliced chicken breasts to the pot and cook until they are no longer pink.
- Pour in chicken broth and bring to a simmer.
- Stir in soy sauce and fish sauce (if using). Season with salt and pepper to taste.
- Add chopped baby bok choy to the pot and cook for a few minutes until wilted and tender.
- Once the bok choy is cooked, taste the soup and adjust seasoning if necessary.
- Serve the Bok Choy Chicken Soup hot, garnished with chopped green onions. You can also serve it over cooked rice or noodles if desired.
