Come one, try this Filipino Coconut candy!
Ingredients:
- 2 cups grated fresh coconut (or unsweetened shredded coconut)
- 1 cup brown sugar, packed
- 1/2 cup water
- 1/4 tsp salt
- 1/4 cup chopped peanuts or cashews (optional)
Instructions:
- Prepare the Caramel: In a saucepan, combine the water, brown sugar, and salt. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture starts to boil.
- Add Coconut: Reduce the heat to low and stir in the grated coconut. Continue to cook, stirring frequently, until the mixture thickens and becomes sticky, about 15-20 minutes.
- Add Nuts (Optional): If using, stir in the chopped peanuts or cashews in the last 5 minutes of cooking.
- Cool and Set: Transfer the mixture to a greased or parchment-lined dish. Spread it out evenly and press down firmly. Let it cool completely and set before cutting into small squares or pieces.
