Come one, try this Filipino Coconut candy!

Ingredients:​

  • 2 cups grated fresh coconut (or unsweetened shredded coconut)
  • 1 cup brown sugar, packed
  • 1/2 cup water
  • 1/4 tsp salt
  • 1/4 cup chopped peanuts or cashews (optional)

Instructions:​

  1. Prepare the Caramel: In a saucepan, combine the water, brown sugar, and salt. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture starts to boil.
  2. Add Coconut: Reduce the heat to low and stir in the grated coconut. Continue to cook, stirring frequently, until the mixture thickens and becomes sticky, about 15-20 minutes.
  3. Add Nuts (Optional): If using, stir in the chopped peanuts or cashews in the last 5 minutes of cooking.
  4. Cool and Set: Transfer the mixture to a greased or parchment-lined dish. Spread it out evenly and press down firmly. Let it cool completely and set before cutting into small squares or pieces.
