- 1 large egg plus 1 yolk
- 8 ounces cream cheese, softened
- 3 tablespoons sugar, plus extra for dusting
- 1 teaspoon lemon juice
- 1/4 teaspoon vanilla extract
- One 17.3-ounce box frozen puff pastry sheets, thawed
- Preheat and Prepare: Preheat your oven to 400 degrees F (200 degrees C). Line 2 baking pans with parchment paper.
- Prepare Cream Cheese Filling: In a medium bowl, beat together the egg yolk, softened cream cheese, 3 tablespoons of sugar, lemon juice, and vanilla extract with an electric mixer on medium-high speed until smooth.
- Assemble the Pastries: Lay out the thawed puff pastry sheets. Cut each sheet into 4 squares. Fold the corners of each square inward by about 1 inch to create octagon shapes. Spoon approximately 2 tablespoons of the cream cheese mixture into the center of each pastry square, without spreading it.
- Egg Wash and Sugar Dusting: In a small bowl, beat the whole egg with 1 teaspoon of water to create an egg wash. Brush the exposed edges of the puff pastry with the egg wash. Generously sprinkle sugar over the pastries.
