Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 1 cup water
- 8 oz pasta (penne, rotini, or your choice)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- 1/2 cup sliced black olives (optional)
- 1/2 cup corn (optional)
- Salt and pepper to taste
Instructions:
- Cook the Pasta:
- Preheat your oven to 375°F (190°C). Cook the pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Beef Mixture:
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the taco seasoning, diced tomatoes with green chilies, tomato sauce, and water. Stir to combine and bring to a simmer. Cook for 5-7 minutes, allowing the flavors to meld.
- Combine Pasta and Beef:
- In a large mixing bowl, combine the cooked pasta and beef mixture. Add the sour cream, half of the cheddar cheese, and half of the mozzarella cheese. Mix until well combined.
- Assemble the Bake:
- Transfer the mixture to a greased 9x13-inch baking dish. Spread it out evenly. Top with the remaining cheddar and mozzarella cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool slightly. Top with chopped green onions, black olives, and corn if using. Serve warm and enjoy!
