Instructions:
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the rice, carrots, celery, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth and sprinkle the thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 4-5 hours or until the chicken is cooked through and the rice is tender.
  5. About 30 minutes before serving, add the frozen peas and stir.
  6. Once done, shred the chicken with two forks and mix it well with the rice and vegetables.
  7. Garnish with fresh parsley if desired.
