CHICKEN CURRY
Ingredients:
- 3 tablespoons coconut oil (divided; vegetable oil also works)
- 1 pound boneless skinless chicken breast or thighs, cut into 1-inch pieces
- 3 tablespoons yellow curry powder (divided)
- Fine sea salt and freshly cracked pepper
- 1 cup diced yellow onion (about 1 small onion)
- 1 and 1/2 teaspoons minced fresh garlic (about 3 cloves)
- 2 tablespoons finely minced ginger (from a 1 and 1/2 inch piece)
- 3 tablespoons red curry paste (adjust for spice levels)
- 1 teaspoon ground coriander
- 1 can (15.25 ounces) full-fat coconut milk (about 1 and 1/2 cups)
- 1 cup chicken stock
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon brown sugar
- 1/4 cup diced cilantro
- 2 teaspoons fish sauce (optional)
- Cooked basmati rice and naan, for serving
- Additional fresh cilantro, for garnish
Instructions:
- Prep: Dice the onion, mince the garlic and ginger. Cut the chicken into bite-sized pieces. Toss the chicken pieces in 1/2 tablespoon curry powder, salt, and pepper.
- Chicken: Heat 1 tablespoon coconut oil in a large cast iron skillet over medium-high heat. Add the chicken and cook until golden on the outside but not cooked through, about 4-5 minutes. Remove and cover with foil.
- Fragrance: Return the skillet to the stovetop, add remaining coconut oil. Add diced onion and sauté until golden. Add garlic and ginger. Stir in curry powder, red curry paste, and coriander; toast for 2-3 minutes.
- Sauce: Pour in coconut milk and chicken stock. Stir until smooth. Simmer for 8-10 minutes until sauce thickens. Add chicken back in. Stir in brown sugar, lime juice, and cilantro. If using, add fish sauce. Simmer until chicken is cooked through.
- Serve: Serve over rice and/or with naan. Garnish with additional cilantro.
- For a thicker sauce, whisk 1-2 tablespoons of sauce with 2 teaspoons cornstarch until smooth and whisk into the curry.
