  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 red bell peppers, seeded and diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley, chopped, for garnish
Instructions:

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet or frying pan, heat the olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and cook until softened, about 3-4 minutes.

  7. Pour in the chicken broth and bring the mixture to a simmer.
  8. Return the cooked chicken breasts to the skillet, nestling them into the sauce. Cover the skillet with a lid and let the chicken simmer in the sauce for 10-12 minutes, or until the chicken is cooked through and no longer pink in the center.
