I whipped up a delightful chicken lo mein last night, and it was a big hit at the dinner table! The savory soy sauce-marinated chicken combined with tender noodles and crisp veggies made for a satisfying and flavorful meal that's perfect for busy weeknights.


Chicken Lo Mein Recipe


Ingredients:


- 8 oz lo mein noodles or spaghetti​
- 2 boneless, skinless chicken breasts, thinly sliced​
- 2 tablespoons soy sauce​
- 1 tablespoon oyster sauce​
- 1 tablespoon hoisin sauce​
- 1 teaspoon sesame oil​
- 2 cloves garlic, minced​
- 1 teaspoon ginger, minced​
- 1 cup sliced vegetables (bell peppers, broccoli, carrots, etc.)​
- 2 green onions, sliced​
- 2 tablespoons vegetable oil​
- Salt and pepper to taste​


Instructions:

1. Cook the lo mein noodles according to package instructions. Drain and set aside.​
2. In a bowl, combine the sliced chicken with soy sauce, oyster sauce, hoisin sauce, and sesame oil. Let it marinate for 10-15 minutes.​
3. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 4-5 minutes. Remove from the pan and set aside.​
4. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.​
5. Add the sliced vegetables to the pan and stir-fry for 3-4 minutes until they are tender-crisp.​
6. Return the cooked chicken to the pan. Add the cooked noodles and green onions. Toss everything together until well combined and heated through.​
7. Season with salt and pepper to taste.​
8. Serve hot and enjoy your homemade chicken lo mein!​
