  • Chicken Breasts: You will require two large chicken breasts for this recipe, as each breast will be sliced into two cutlets to serve four portions.
  • Breadcrumbs: Plain breadcrumbs are utilized so they can be seasoned according to preference, yielding a crispy coating on the chicken.
  • Grated Parmesan: You have the option to utilize pre-grated Parmesan or grate your own.
  • Seasonings: Garlic powder, Italian seasoning, salt, and freshly ground black pepper are used to season both the chicken and the breadcrumbs.
  • Egg: The egg is employed to help the breadcrumbs adhere to the chicken.
  • All-Purpose Flour: A small amount of flour is used to thicken the sauce.
  • Cooking Oil: Any neutral cooking oil of your choice is suitable.
  • Marinara Sauce: While we prefer using Homemade Marinara Sauce, your preferred jarred sauce is also suitable.
  • Mozzarella Cheese: Pre-shredded mozzarella cheese is used, but you can opt to shred your own. Low-moisture, whole-milk mozzarella is recommended, as fresh mozzarella contains excessive moisture. Provolone cheese is also an alternative option.
  • Fresh Parsley: Completely optional, but it does provide a delightful freshness to the dish when added at the end.

INSTRUCTIONS

  1. Employ a sharp knife to skillfully slice the chicken breasts lengthwise into two pieces, yielding a total of 4 cutlets. Alternatively, pre-cut chicken cutlets can be used.
  2. Gently season both sides of the chicken with a dash of salt and pepper, Italian seasoning, and garlic powder.
  3. Combine bread crumbs, parmesan, garlic powder, Italian seasoning, salt, and a dash of freshly ground pepper in a wide, shallow bowl or container.
  4. Whisk the egg in a separate wide, shallow bowl or container until it becomes smooth.
  5. Place flour in a third shallow bowl.
  6. Coat each chicken piece with flour, shaking off any excess. Subsequently, immerse it in the egg mixture, ensuring complete coverage while allowing excess to drip off. Finally, dip the chicken in the seasoned bread crumbs, ensuring thorough coating on both sides.
  7. Heat cooking oil in a large skillet over medium-high heat. Once the skillet and oil are adequately hot, add the chicken and cook on the first side until it turns golden brown, approximately 5 minutes.
  8. Flip the chicken and reduce the heat to medium. Add 2 tablespoons of marinara sauce and ¼ cup shredded mozzarella cheese on top of each cutlet. Cover the skillet with a lid to facilitate complete melting of the cheese, warming of the marinara sauce, and thorough cooking of the chicken, for about 5-7 more minutes.
  9. Optionally, garnish the chicken with freshly chopped parsley and serve with spaghetti and extra marinara sauce on the side.
