- 4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (plain or seasoned)
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Olive oil for frying
- Fresh basil leaves for garnish (optional)
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
- Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb-Parmesan mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
- Transfer the browned chicken breasts to a baking dish.
- Spoon marinara sauce over each chicken breast, covering them evenly.
- Sprinkle shredded mozzarella cheese over the top of each chicken breast.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving.
- Garnish with fresh basil leaves if desired, and serve hot with pasta or a side salad.
