A chicken salad sandwich is a delightful and versatile dish that combines the rich flavors of tender chicken, crunchy vegetables, and a creamy dressing. ith a few simple ingredients, you can create a delicious meal that’s sure to please everyone.
Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 celery stalk, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup grapes, halved (optional)
- 1/4 cup chopped walnuts or almonds (optional)
- Salt and pepper to taste
- Lettuce leaves
- 8 slices of bread (whole wheat, white, or your choice)
- 1 tablespoon fresh lemon juice (optional)
Instructions:
- Prepare the Chicken:
- If not already cooked, you can boil, grill, or bake the chicken until it’s fully cooked. Let it cool, then shred or dice it into bite-sized pieces.
- Make the Salad Mixture:
- In a large bowl, combine the shredded or diced chicken, mayonnaise, Dijon mustard, celery, red onion, grapes, and nuts (if using). Add lemon juice for extra freshness, if desired. Mix well until all the ingredients are evenly coated.
- Season:
- Add salt and pepper to taste. Adjust the seasoning according to your preference.
- Assemble the Sandwiches:
- Lay out the slices of bread. Place a lettuce leaf on four of the slices. Spoon the chicken salad mixture onto the lettuce leaves, then top with the remaining bread slices to form sandwiches.
