Ingredients:
- 4 bell peppers, halved and seeds removed
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup cooked quinoa or rice
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 cup feta cheese, crumbled (optional)
- Salt and pepper to taste
- Olive oil for drizzling
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the chickpeas, spinach, quinoa, cumin, paprika, salt, pepper, and feta cheese (if using).
