Ingredients:
- For the chicken:
- 1 lb chicken thighs, boneless and skinless
- 2 tbsp chipotle seasoning
- Juice and zest of 2 limes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- For the toppings:
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Lime wedges for serving
- For the tortillas:
- 8 small flour or corn tortillas
- Marinate the chicken: In a bowl, mix together the chipotle seasoning, lime juice, lime zest, olive oil, garlic, salt, and pepper. Add the chicken thighs and coat well. Marinate for at least 30 minutes.
- Cook the chicken: Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until fully cooked and charred. Let it rest for a few minutes, then slice into strips.
- Prepare the tortillas: Warm the tortillas in a dry skillet or on the grill until soft and pliable.
- Assemble the tacos: Place a few strips of chicken on each tortilla, then top with shredded lettuce, diced tomatoes, red onion, cilantro, and avocado slices. Serve with lime wedges on the side.
