- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons red wine vinegar or apple cider vinegar
- In a large mixing bowl, combine all the ingredients: ground pork, minced garlic, smoked paprika, chili powder, ground cumin, dried oregano, cayenne pepper, salt, pepper, and vinegar.
- Mix the ingredients thoroughly until well combined. You can use your hands or a spoon to ensure even distribution of spices.
- Once mixed, cover the bowl with plastic wrap and let the chorizo mixture marinate in the refrigerator for at least 2 hours, preferably overnight, to allow the flavors to meld.
- After marinating, use the chorizo immediately in your favorite recipes, or store it in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
