  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 2 tablespoons all-purpose flour
  • Chopped fresh parsley for garnish


  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.
  4. Add the sliced mushrooms to the skillet and cook until they release their juices and start to brown, about 5 minutes.
  5. Sprinkle the flour over the mushrooms and stir to combine.
  6. Pour in the white wine and chicken broth, stirring to scrape up any browned bits from the bottom of the skillet.
  7. Return the chicken thighs to the skillet along with the fresh thyme sprigs. Bring the liquid to a simmer, then reduce the heat to low. Cover and simmer for 30-40 minutes, until the chicken is cooked through and tender.
  8. Serve the Coq au Vin Blanc hot, garnished with chopped fresh parsley.
