Ingredients:​

  • 4-6 crayfish (cleaned and deveined)
  • 2 tablespoons olive oil
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
  • 1/4 cup tomato paste
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • Fresh basil or parsley (chopped, for garnish)

Instructions:​

  1. Prepare Crayfish: Clean and devein the crayfish if not already done.
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Make Tomato Sauce: Stir in diced tomatoes, tomato paste, and broth. Add oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for about 5 minutes to let the flavors meld.
  4. Cook Crayfish: Add crayfish to the skillet and cover. Simmer for 8-10 minutes, or until the crayfish are opaque and cooked through.
  5. Finish and Serve: Adjust seasoning with salt and pepper as needed. Garnish with fresh basil or parsley before serving.
