- 2 tablespoons butter
- 1 small onion, finely chopped

- 1/4 cup all-purpose flour
- 1 1/2 cups milk

- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
- Prepare the Spinach:
- If using fresh spinach, wash it well and remove the stems. Bring a large pot of water to a boil and add the spinach. Cook for about 1 minute until wilted. Drain and squeeze out excess water. Chop the spinach and set aside.
- If using frozen spinach, thaw it and squeeze out excess water. Set aside.
- Cook the Onion and Garlic:
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for another minute.
- Make the Sauce:
- Sprinkle the flour over the onions and garlic. Stir well and cook for 2 minutes to get rid of the raw flour taste.
- Slowly pour in the milk, stirring constantly to avoid lumps. Cook until the mixture thickens, about 5-7 minutes.
- Add the heavy cream, nutmeg, salt, and pepper. Stir well.
- Combine Spinach and Sauce:
- Add the chopped spinach to the skillet. Stir well to combine. Cook for another 3-5 minutes until the spinach is heated through and coated with the creamy sauce.
- If using, stir in the grated Parmesan cheese until melted and combined.
- Serve:
- Transfer the creamed spinach to a serving dish. Serve hot.
