- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1 cup (240ml) chicken broth
- 1 cup (100g) grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 8 oz (225g) fettuccine or pasta of your choice
- Fresh parsley, chopped, for garnish (optional)
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
- Pour in the heavy cream and chicken broth, stirring constantly. Bring the mixture to a simmer.
- Stir in the grated Parmesan cheese and Italian seasoning until the cheese is melted and the sauce is smooth and creamy.
- Meanwhile, cook the fettuccine according to the package instructions until al dente. Drain the pasta, reserving some of the cooking water.
- Add the cooked chicken back to the skillet with the Alfredo sauce, stirring to combine. If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
- Add the cooked fettuccine to the skillet with the chicken and Alfredo sauce, tossing until the pasta is evenly coated.
