Hey everyone! I wanted to share a recipe that’s become a favorite in my household—Creamy Italian Garlic Seafood Bake. It’s perfect for when you want something indulgent but not too complicated to make. Plus, it feels like a little bit of restaurant-quality comfort food at home.

Ingredients:
- 1 lb of shrimp, peeled and deveined
- 1 lb of scallops
- 1/2 lb of mussels, cleaned
- 1/2 lb of white fish fillets (like cod or haddock), cut into bite-sized pieces
- 3 cloves of garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for a little kick)
- Salt and pepper to taste
- Fresh lemon wedges for serving
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, scallops, and white fish pieces to the skillet. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using). Cook for 2-3 minutes until the seafood starts to turn opaque but isn’t fully cooked through.
- Remove the seafood from the skillet and set it aside. In the same skillet, add the heavy cream and sun-dried tomatoes. Simmer for about 3-4 minutes until the sauce thickens slightly.
- Stir in the Parmesan cheese and half of the mozzarella. Let it melt into the sauce.
- Return the seafood to the skillet, gently tossing to coat it in the creamy sauce. Add the mussels last, making sure they’re evenly distributed.
- Transfer the mixture to a baking dish, sprinkle the remaining mozzarella on top, and bake in the preheated oven for about 10-15 minutes, or until the cheese is bubbly and slightly golden.
- Garnish with fresh parsley and serve with lemon wedges on the side. It’s delicious over pasta, rice, or with some crusty bread to soak up all that creamy goodness!
