There are times when I get hungry at midnight, and I know many of you also experience this. So, I'm happy to share one of my favorite midnight snack idea—a Crispy Avocado Egg Cups.
Ingredients:
1 ripe avocado
2 small eggs (or 1 large egg, if preferred)
1 tablespoon grated Parmesan cheese (optional for extra crispiness)
A pinch of paprika or chili powder (for a kick)
Salt and pepper to taste
Fresh cilantro or parsley (optional, for garnish)
Instructions:
Preheat the Oven: Start by preheating your oven to 375°F (190°C). If you're using a toaster oven, that's perfect for a midnight snack.
Prepare the Avocado: Cut the avocado in half and remove the pit. Gently scoop out a little bit of the flesh from each half to create space for the egg.
Add Parmesan: Sprinkle a little grated Parmesan cheese inside the hollow of each avocado half for added crispiness when baking.
Crack the Egg: Carefully crack one egg into each avocado half. Make sure not to break the yolk. If the egg overflows, you can use a spoon to remove any excess white.
Season: Sprinkle a pinch of paprika, chili powder, salt, and pepper on top of the eggs and avocado for extra flavor.
Bake: Place the avocado halves on a baking tray and bake for 12-15 minutes, or until the egg whites are set but the yolk is still soft (or longer if you prefer your eggs fully cooked).
