Are you tired of delivery food but don't know how to cook? I'll share a quick recipe! Here's a delicious and straightforward recipe for Crispy Chicken Stir Fry:

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, peeled and minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup snow peas, trimmed
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving
Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the soy sauce, rice vinegar, honey, minced garlic, and minced ginger. Add the sliced chicken breasts to the bowl and toss to coat. Let it marinate for about 15-20 minutes.
  2. Prepare the Vegetables:
    • While the chicken is marinating, prepare your vegetables by slicing the bell peppers, onion, and trimming the snow peas.
  3. Stir Fry:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Once the oil is hot, add the marinated chicken to the skillet in a single layer (reserve the marinade). Let it cook without stirring for 2-3 minutes to get a nice sear on one side. Then stir and cook for another 2-3 minutes until the chicken is cooked through and slightly crispy. Remove the chicken from the skillet and set it aside.
  4. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of oil.
    • Add the sliced bell peppers and onion to the skillet. Stir fry for 2-3 minutes until the vegetables start to soften but are still crisp.
  5. Combine and Finish:
    • Return the cooked chicken back to the skillet with the vegetables.
    • Add the snow peas and the reserved marinade.
    • Stir everything together and cook for an additional 1-2 minutes until the sauce slightly thickens and the snow peas are tender-crisp.
    • Season with salt and pepper to taste.
  6. Serve:
    • Serve the crispy chicken stir fry immediately over cooked rice or noodles.
Optional Additions:

  • You can add other vegetables like broccoli, carrots, or baby corn.
  • Garnish with chopped green onions, sesame seeds, or crushed red pepper flakes for added flavor and presentation.
