- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1-inch piece of ginger, peeled and minced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 cup snow peas, trimmed
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
- Marinate the Chicken:
- In a bowl, combine the soy sauce, rice vinegar, honey, minced garlic, and minced ginger. Add the sliced chicken breasts to the bowl and toss to coat. Let it marinate for about 15-20 minutes.
- Prepare the Vegetables:
- While the chicken is marinating, prepare your vegetables by slicing the bell peppers, onion, and trimming the snow peas.
- Stir Fry:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Once the oil is hot, add the marinated chicken to the skillet in a single layer (reserve the marinade). Let it cook without stirring for 2-3 minutes to get a nice sear on one side. Then stir and cook for another 2-3 minutes until the chicken is cooked through and slightly crispy. Remove the chicken from the skillet and set it aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of oil.
- Add the sliced bell peppers and onion to the skillet. Stir fry for 2-3 minutes until the vegetables start to soften but are still crisp.
- Combine and Finish:
- Return the cooked chicken back to the skillet with the vegetables.
- Add the snow peas and the reserved marinade.
- Stir everything together and cook for an additional 1-2 minutes until the sauce slightly thickens and the snow peas are tender-crisp.
- Season with salt and pepper to taste.
- Serve:
- Serve the crispy chicken stir fry immediately over cooked rice or noodles.
- You can add other vegetables like broccoli, carrots, or baby corn.
- Garnish with chopped green onions, sesame seeds, or crushed red pepper flakes for added flavor and presentation.
