- 1 cup broccoli florets
- 1 cup snap peas
- 1/2 cup carrots, thinly sliced
- 1/4 cup soy sauce
- 1/4 cup teriyaki sauce
- 1 tablespoon honey or brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- Cooked rice or noodles, for serving
- Sesame seeds and chopped green onions for garnish (optional)
- Prepare the Sauce:
- In a small bowl, whisk together soy sauce, teriyaki sauce, honey (or brown sugar), garlic, and ginger. Set aside.
- Cook the Shrimp:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
- Stir-Fry the Vegetables:
- In the same skillet, add a bit more oil if needed and stir-fry the bell peppers, broccoli, snap peas, and carrots until tender-crisp, about 4-5 minutes.
- Combine and Cook:
- Return the cooked shrimp to the skillet with the vegetables.
- Pour the sauce over the shrimp and vegetables, tossing to coat evenly.
- Cook for an additional 1-2 minutes until everything is heated through and the sauce has thickened slightly.
- Serve:
- Serve the Teriyaki Shrimp Stir-Fry over cooked rice or noodles.
- Garnish with sesame seeds and chopped green onions if desired.
