- 6 ounces unsalted butter
- 2 tablespoons flour
- 1 cup whole milk
- 1 bay leaf
- 1/2 teaspoon kosher salt, plus more for seasoning
- 1/4 cup grated Parmesan cheese
- 8 slices thick sourdough bread
- 8 to 12 slices good quality ham
- 12 ounces Gruyere cheese, grated
- Nonstick spray
- 4 eggs
Directions:
- Preheat the broiler.
- Make the cheese sauce: Melt 1 ounce butter in a saucepan over medium heat. Whisk in the flour and cook for 2-3 minutes. Slowly add milk and bay leaf, stirring until thickened, about 10-12 minutes. Remove bay leaf, stir in Parmesan, and set aside to cool.
- Arrange 4 bread slices on a surface, top each with ham slices, then spread cheese sauce over ham. Place another bread slice on top of each sandwich.
- Heat a large skillet and melt half of the remaining butter. Cook 2 sandwiches until golden brown on both sides, about 2 minutes each side. Repeat with remaining butter and sandwiches.
- Spread remaining cheese sauce on top of sandwiches and sprinkle with remaining Gruyere cheese.
- Wipe skillet, spray with nonstick spray, and fry eggs until cooked to your liking.
- While eggs cook, place sandwiches under broiler until golden brown, about 1-2 minutes.
- Season eggs with salt, place one on each sandwich, and serve immediately.
