Ingredients​

  • 2 large cucumbers
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1-2 teaspoons honey or agave syrup (optional, to taste)
  • A pinch of salt (optional)
  • Fresh mint leaves (optional, for garnish)
  • Water (as needed)

Instructions​

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly. You can peel them if you prefer, but leaving the skin on adds extra nutrients and color.
  2. Chop: Cut the cucumbers into smaller pieces for easier blending.
  3. Blend: Place the cucumber pieces in a blender. Add a bit of water (about 1/2 cup to start) to help with blending. Blend until smooth.
  4. Strain (Optional): If you prefer a smoother juice, you can strain the mixture through a fine mesh sieve or cheesecloth into a bowl or pitcher. Press down to extract as much juice as possible.
  5. Add Flavor: Stir in the lemon juice, honey or agave syrup, and a pinch of salt if desired. Adjust the sweetness to your liking.
  6. Chill and Serve: Pour the juice into glasses over ice and garnish with fresh mint leaves if using.

Tips​

  • For added flavor, you can mix in other ingredients like ginger, lime, or even a splash of apple juice.
  • This juice is best served fresh but can be stored in the fridge for up to 24 hours.

Hi all! I think adding a bit of mint to cucumber juice makes it super refreshing! Perfect for a hot day, though you could also try basil for a twist 🌿🥒.
