Ingredients:
  • 1 and 1/3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3/4 cup unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 3 tablespoons butter, softened
  • 1 and 1/2 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
Instructions:
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, cocoa powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Remove the cupcakes from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Buttercream Frosting:

Ingredients:

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • 1/4 cup milk or cream
  • 2 teaspoons vanilla extract
  • Pinch of salt
Instructions:
  1. In a large mixing bowl, beat the softened butter on medium speed until creamy.
  2. Gradually add 3 cups of powdered sugar and cocoa powder, beating well after each addition.
  3. Pour in the milk or cream, vanilla extract, and a pinch of salt. Beat on medium-high speed for 3-5 minutes, until the frosting is light and fluffy.
  4. If the frosting is too thick, add more milk or cream, a tablespoon at a time, until you reach your desired consistency. If it's too thin, add more powdered sugar, a quarter cup at a time.
  5. Once the cupcakes are completely cooled, pipe or spread the frosting onto the cupcakes using a piping bag or offset spatula
