  • 1 pound protein of your choice (such as chicken, tofu, shrimp, or chickpeas)
  • Salt and pepper to taste
  • Cooked rice or naan bread, for serving
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions:​

  1. Prepare Ingredients:
    • Chop the onion, mince the garlic, and grate the ginger.
    • Dice your choice of vegetables and prepare your protein (if using meat or tofu).
  2. Cook Aromatics:
    • Heat the vegetable oil in a large skillet or pot over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes.
    • Stir in the minced garlic and grated ginger and cook for another 1-2 minutes until fragrant.
  3. Add Spices:
    • Sprinkle the curry powder, ground turmeric, ground cumin, ground coriander, and paprika over the cooked aromatics.

  4. Add Liquid and Vegetables:
    • Pour in the coconut milk and vegetable or chicken broth.
    • Add the diced vegetables to the pot and stir to combine.
    • Bring the mixture to a simmer and let it cook for about 10-15 minutes until the vegetables are tender.
  5. Add Protein:
    • If using meat, tofu, shrimp, or chickpeas, add them to the curry and simmer until cooked through, about 5-10 minutes depending on the protein.
  6. Season and Serve:
    • Taste the curry and season with salt and pepper as needed.
    • Serve the curry hot over cooked rice or with naan bread on the side.
    • Garnish with fresh cilantro and serve with lime wedges for squeezing over the curry (if desired).
