I recently made Danish Koldskål, and it was a refreshing and delightful treat, perfect for warm days! This traditional cold buttermilk soup is a classic summer dish in Denmark, often enjoyed with crunchy cookies called kammerjunkere. The tangy flavor of the buttermilk combined with the sweetness of sugar and a hint of lemon creates a wonderfully light dessert. Here’s how you can whip up your own Koldskål at home:
Ingredients:
- For the Koldskål:
- 2 cups buttermilk
- 1 cup plain yogurt (or sour cream)
- 1/2 cup milk
- 1/3 cup sugar (adjust to taste)
- Juice and zest of 1 lemon
- 1 teaspoon vanilla extract (optional)
- For Serving:
- Kammerjunkere (small Danish cookies) or any crunchy cookie
- Fresh berries (such as strawberries or blueberries) for garnish (optional)
- Mint leaves for garnish (optional)
Instructions:
1. Combine the Base:
- In a large mixing bowl, whisk together the buttermilk, yogurt, and milk until smooth and well combined.
2. Sweeten and Flavor:
- Stir in the sugar, lemon juice, and lemon zest. If you’re using vanilla extract, add that too. Mix until the sugar is dissolved and everything is well incorporated.
3. Chill:
