Ingredients:
- 1 cup pitted dates
- 1 cup pecans
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Shredded coconut (optional, for rolling)
Instructions:
- Prepare the Ingredients:
- If your dates are a bit dry, soak them in warm water for about 10 minutes to soften them. Drain well before using.
- Toast the pecans in a dry skillet over medium heat for about 5 minutes, stirring frequently, until fragrant. Let them cool.
- Blend:
- In a food processor, combine the dates, pecans, vanilla extract, and salt. Process until the mixture is well combined and forms a sticky dough.
- Form the Balls:
