I wanted to share one of my favorite recipes that's not only delicious but also super healthy. This Avocado & Black Bean Salad is perfect for a light lunch or as a refreshing side dish. It's packed with protein, fiber, and healthy fats, and it's so easy to make!

Ingredients:
- 1 can (15 oz) black beans, rinsed and drained
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
- In a large mixing bowl, combine the black beans, diced avocado, cherry tomatoes, red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice and olive oil to make the dressing. Season with salt and pepper to taste.
- Pour the dressing over the salad ingredients and gently toss until everything is well coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for later. This salad tastes even better after the flavors have had a chance to meld together for a bit.
