- 2 large flour tortillas
- 1/4 cup pizza sauce or marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 large eggs
- Salt and black pepper, to taste
- Optional toppings: cooked bacon or ham, diced bell peppers, sliced mushrooms, diced tomatoes, chopped spinach, sliced olives, chopped green onions, etc.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Place the flour tortillas on the prepared baking sheet.
- Spread a thin layer of pizza sauce or marinara sauce evenly over each tortilla, leaving a small border around the edges.
- Sprinkle shredded mozzarella cheese over the sauce, covering the entire surface of each tortilla.
- If using any additional toppings, such as cooked bacon or ham, diced bell peppers, sliced mushrooms, etc., scatter them over the cheese.
- Carefully crack one egg into the center of each tortilla.
- Season the eggs with a pinch of salt and black pepper, to taste.
- Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the tortillas are crispy, the cheese is melted and bubbly, and the eggs are cooked to your desired level of doneness.
- Once the Breakfast Tortilla Pizzas are done baking, remove them from the oven and let them cool slightly.
- Use a pizza cutter or sharp knife to slice each tortilla pizza into wedges.
