Breakfast burritos are a delicious and convenient way to start your day. Packed with protein and flavor, they are perfect for a quick breakfast or a satisfying brunch. This easy breakfast burrito recipe will show you how to make a tasty and hearty meal that you can enjoy at home or on the go. Let's get rolling! 


Ingredients:
- 4 large flour tortillas
- 6 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 1 tablespoon butter or oil
- 1 cup cooked breakfast sausage or bacon, crumbled
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 avocado, sliced
- Salsa, for serving (optional)
- Sour cream, for serving (optional)
Instructions:
- Prepare the Ingredients:
- Cook and crumble the breakfast sausage or bacon if not already done.
- Dice the tomatoes, onions, and bell peppers.
- Slice the avocado.
- Scramble the Eggs:
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat the butter or oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked but still soft and creamy. Remove from heat.
- Warm the Tortillas:
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they are soft and pliable. Alternatively, wrap them in a damp paper towel and microwave for 20-30 seconds.
- Assemble the Burritos:
- Lay a warm tortilla flat on a clean surface.
- Place a portion of scrambled eggs in the center of the tortilla.
- Add some crumbled sausage or bacon, shredded cheese, diced tomatoes, onions, bell peppers, and avocado slices.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
- Serve:
- Serve the breakfast burritos immediately with salsa and sour cream on the side if desired.
- For a crispy burrito, you can lightly brown them in the skillet before serving.
