Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 8 large eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 lb (225g) breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Salsa, avocado, sour cream, or your favorite toppings (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Place the diced sweet potatoes on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
3. Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
5. Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through.
6. Warm the flour tortillas in the microwave or on a skillet until they are pliable.
7. Divide the scrambled eggs, roasted sweet potatoes, cooked sausage, and shredded cheese evenly among the tortillas.
8. Fold the sides of each tortilla over the filling, then roll them up tightly to form burritos.
9. Place the burritos seam-side down on a baking sheet lined with parchment paper.
10. Bake in the preheated oven for 10-15 minutes, or until the burritos are heated through and the cheese is melted.
11. Remove from the oven and serve immediately, with your favorite toppings if desired.
