- 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite cheese)
- 4 slices cooked bacon or sausage links, chopped
- Optional toppings: salsa, avocado, sour cream, chopped cilantro
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through. Remove from heat.
- Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- Assemble the burritos: divide the scrambled eggs, cooked potatoes, cheese, and cooked bacon or sausage among the tortillas, placing the fillings in the center of each tortilla.
- Fold the sides of each tortilla over the filling, then fold the bottom edge up and roll tightly to enclose the filling.
- If desired, warm the assembled burritos in a skillet or microwave for a minute or two to melt the cheese and heat everything through.
- Serve immediately, with optional toppings like salsa, avocado, sour cream, or chopped cilantro on the side.
