Easy Cheesy Veggie Frittata Recipe

Ingredients:
  • 6 large eggs
  • 1/4 cup milk (any type you prefer)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 small onion, diced
  • 1 bell pepper, diced (any color you like)
  • 1 cup chopped spinach or kale
  • 1/2 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite cheese blend)
  • Fresh herbs for garnish (optional)
Instructions:
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch oven-safe skillet or baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes until softened.
  4. Add the chopped spinach or kale to the skillet and cook for an additional 2 minutes, until wilted.
  5. Pour the egg mixture evenly over the vegetables in the skillet. Arrange the halved cherry tomatoes on top.
  6. Sprinkle the shredded cheese over the entire surface of the frittata, covering the vegetables evenly.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is golden and bubbly.
  8. Once cooked, remove the frittata from the oven and let it cool slightly. Garnish with fresh herbs if desired.
  9. Slice the frittata into wedges and serve warm. Enjoy your cheesy brunch delight with a side of toast or a fresh salad.
