Easy Mochi Waffles Recipe 🧇

Mochi waffles combine crunchy waffles with chewy mochi in one bite. Although they may sound specialized, they're actually easy to make and require just one unique ingredient: mochiko. Everything else you probably have in your pantry. This recipe is perfect for kids and snacks, so you should definitely give it a try!

Ingredients

  • 1 1/2 cups milk
  • 2 large eggs, beaten
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup mochiko (sweet rice flour)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • Whipped cream, berries, and maple syrup (for topping)
Directions
  1. Whisk together the milk, eggs, and vanilla in a bowl.
  2. In a separate bowl, whisk together the flour, mochiko, baking powder, salt, and sugar.
  3. Combine the wet and dry mixtures until fully combined, making a thick but pourable batter.
  4. Pour batter into your waffle iron (round, square, or Belgian) and cook until golden brown. Mochi waffles might take slightly longer to cook than regular waffles.
  5. Keep finished waffles warm in a 200°F oven while cooking the rest.
  6. Serve with whipped cream, fresh berries, and syrup. Enjoy!🧇
