Easy Pot Roast Recipe

I recently tried this easy pot roast recipe, and let me tell you, it was a game changer for a cozy, comforting meal. It’s simple, hearty, and absolutely delicious. Here’s everything you need to get started.

Ingredients:​

  • 3 lbs beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, but highly recommended)
  • 3 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions:​

  1. Preheat and Prep: Preheat your oven to 300°F (150°C). Season the beef chuck roast generously with salt and pepper.
  2. Sear the Meat: In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the roast on all sides until it’s nicely browned. This locks in the flavor, so don’t skip this step! Once browned, remove the roast and set it aside.
  3. Sauté the Aromatics: In the same pot, add the chopped onion and garlic. Sauté until they’re fragrant and the onion becomes translucent.
  4. Deglaze: Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for a couple of minutes to reduce slightly.
  5. Combine and Cook: Return the roast to the pot. Add the beef broth, carrots, potatoes, rosemary, and thyme. Make sure the liquid covers about halfway up the sides of the roast. Bring to a simmer.
  6. Slow Cook: Cover the pot with a lid and transfer it to the preheated oven. Let it cook for about 3-4 hours, or until the meat is tender and falls apart easily.
  7. Serve: Remove the pot roast from the oven and let it rest for a few minutes before serving. Slice or shred the meat, and serve with the vegetables and some of that delicious broth.
