Just made this quick veggie pita for lunch, and it’s officially my new go-to. Healthy, fresh, and ready in minutes!

Easy Veggie Pita​

Ingredients:

  • 2 whole wheat pita pockets
  • 1/2 cup hummus
  • 1 small cucumber, sliced
  • 1 small tomato, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled feta (optional)
  • A handful of fresh spinach or lettuce
  • A drizzle of olive oil and lemon juice
  • Salt and pepper to taste
Instructions:

  1. Warm the pita pockets slightly for easier handling.
  2. Spread a generous layer of hummus inside each pita.
  3. Stuff the pita with cucumber, tomato, shredded carrots, spinach, and feta if using.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  5. Fold and enjoy!
So fresh, so easy, and perfect for when you need something quick but filling!
