Easy Veggie Pita
Ingredients:- 2 whole wheat pita pockets
- 1/2 cup hummus
- 1 small cucumber, sliced
- 1 small tomato, sliced
- 1/4 cup shredded carrots
- 1/4 cup crumbled feta (optional)
- A handful of fresh spinach or lettuce
- A drizzle of olive oil and lemon juice
- Salt and pepper to taste
- Warm the pita pockets slightly for easier handling.
- Spread a generous layer of hummus inside each pita.
- Stuff the pita with cucumber, tomato, shredded carrots, spinach, and feta if using.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Fold and enjoy!
