Ingredients:
  • 2 medium-sized eggplants, sliced into 1/2-inch rounds
  • Salt
  • 2 cups of marinara sauce
  • 1/2 cup of grated Parmesan cheese2 cups of shredded mozzarella cheese
  • 1 cup of all-purpose flour
  • 3 eggs, beaten
  • 1 cup of breadcrumbs
  • 1/4 cup of chopped fresh basil (optional)
  • Olive oil, for frying
Instructions:
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
  2. Place the eggplant slices in a colander and sprinkle them with salt. Let them sit for about 30 minutes to draw out any bitterness. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Dip each eggplant slice into the flour, then the beaten eggs, and finally the breadcrumbs, making sure to coat each slice evenly.
  5. Heat about 1/4 inch of olive oil in a large skillet over medium heat. Once the oil is hot, add the breaded eggplant slices in batches and fry until golden brown on both sides, about 2-3 minutes per side. Transfer the fried eggplant slices to a paper towel-lined plate to drain any excess oil.
  6. Spread a thin layer of marinara sauce in the bottom of the prepared baking dish. Arrange a layer of fried eggplant slices on top of the sauce, followed by a layer of shredded mozzarella cheese and grated Parmesan cheese. Repeat the layers until all the ingredients are used, finishing with a layer of cheese on top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and the sauce is bubbling.
  9. Let the Eggplant Parmesan cool for a few minutes before serving. Garnish with chopped fresh basil, if desired.
