  • 1/4 cup tequila (optional)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 cup shredded cheddar cheese
  • 1 cup crumbled tortilla chips (optional)
For the Dressing:
  • 1/2 cup ranch dressing
  • 1/4 cup salsa
  • 1/4 cup sour cream
Instructions:
  1. Prepare the Marinade:
    • In a large bowl, whisk together lime juice, olive oil, tequila (if using), soy sauce, minced garlic, cumin, chili powder, smoked paprika, onion powder, salt, and black pepper.
  2. Marinate the Chicken:
    • Place the chicken breasts in a zip-top bag or shallow dish.
    • Pour the marinade over the chicken, ensuring each piece is well coated.
    • Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
  3. Make the Dressing:
    • In a small bowl, mix together ranch dressing, salsa, and sour cream. Set aside.
  4. Cook the Chicken:
    • Preheat your grill or grill pan to medium-high heat.
    • Remove the chicken from the marinade and discard the marinade.
    • Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Add Cheese and Chips:
    • In the last few minutes of grilling, sprinkle shredded cheddar cheese over each chicken breast.
    • If using, sprinkle crumbled tortilla chips on top of the cheese.
    • Close the grill lid and let the cheese melt.
  6. Serve:
    • Remove the chicken from the grill and let it rest for a couple of minutes.
    • Drizzle the prepared dressing over the chicken.
    • Garnish with fresh cilantro.
