Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice (about 2 limes)
- 1/4 cup olive oil
- 1/4 cup tequila (optional)
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1 cup shredded cheddar cheese
- 1 cup crumbled tortilla chips (optional)
- 1/2 cup ranch dressing
- 1/4 cup salsa
- 1/4 cup sour cream
- Prepare the Marinade:
- In a large bowl, whisk together lime juice, olive oil, tequila (if using), soy sauce, minced garlic, cumin, chili powder, smoked paprika, onion powder, salt, and black pepper.
- Marinate the Chicken:
- Place the chicken breasts in a zip-top bag or shallow dish.
- Pour the marinade over the chicken, ensuring each piece is well coated.
- Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
- Make the Dressing:
- In a small bowl, mix together ranch dressing, salsa, and sour cream. Set aside.
- Cook the Chicken:
- Preheat your grill or grill pan to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Add Cheese and Chips:
- In the last few minutes of grilling, sprinkle shredded cheddar cheese over each chicken breast.
- If using, sprinkle crumbled tortilla chips on top of the cheese.
- Close the grill lid and let the cheese melt.
- Serve:
- Remove the chicken from the grill and let it rest for a couple of minutes.
- Drizzle the prepared dressing over the chicken.
- Garnish with fresh cilantro.
