I recently tried making a comforting bowl of fish chowder, and it turned out amazing. The flavors were rich and hearty, perfect for a cozy meal.
Ingredients:
- 1 lb white fish fillets (like cod or haddock), cut into bite-sized pieces
- 4 slices of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 2 cups fish or chicken broth
- 1 cup milk or cream
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon fat in the pot.
- Add the diced onion and minced garlic to the pot, cooking until softened and fragrant.
- Stir in the diced potatoes and cook for a few minutes, then add the broth and bay leaf. Bring to a simmer and cook until the potatoes are tender, about 10-15 minutes.
- Add the fish pieces and cook for another 5 minutes, or until the fish is cooked through and flakes easily.
- Stir in the milk or cream, and let it heat through without boiling. Season with salt and pepper to taste.
- Serve the chowder hot, garnished with the crispy bacon and fresh parsley.
