Fish Chowder

I recently tried making a comforting bowl of fish chowder, and it turned out amazing. The flavors were rich and hearty, perfect for a cozy meal.

Ingredients:​

  • 1 lb white fish fillets (like cod or haddock), cut into bite-sized pieces
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 2 cups fish or chicken broth
  • 1 cup milk or cream
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:​

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon fat in the pot.
  2. Add the diced onion and minced garlic to the pot, cooking until softened and fragrant.
  3. Stir in the diced potatoes and cook for a few minutes, then add the broth and bay leaf. Bring to a simmer and cook until the potatoes are tender, about 10-15 minutes.
  4. Add the fish pieces and cook for another 5 minutes, or until the fish is cooked through and flakes easily.
  5. Stir in the milk or cream, and let it heat through without boiling. Season with salt and pepper to taste.
  6. Serve the chowder hot, garnished with the crispy bacon and fresh parsley.
