Last month, my aunt visited us and she cooked this Fried Lapu-lapu fish with a sweet and tangy mango sauce. Lapu-lapu is also known as grouper fish and it's a popular recipe due to its firm and mild-flavored flesh.

Fried Lapu-Lapu with Mango Sauce Recipe
Ingredients:
For the Fried Lapu-Lapu:
- 1 kg Lapu-Lapu (grouper fish) fillets, cut into serving-sized pieces
- 1 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
- Lemon wedges for serving
For the Mango Sauce:
- 2 ripe mangoes, peeled and diced
- 1/4 cup white vinegar
- 2 tablespoons honey or sugar
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1 garlic clove, minced
- 1/4 teaspoon red chili flakes (optional, for heat)
- Salt and pepper to taste
- 1 tablespoon vegetable oil
Instructions:
- Prepare the Mango Sauce:
- In a small saucepan, heat the vegetable oil over medium heat.
- Add the minced garlic and grated ginger to the saucepan. Sauté for 1-2 minutes until fragrant.
- Add the diced mangoes, white vinegar, honey or sugar, soy sauce, and red chili flakes (if using) to the saucepan.
- Season with salt and pepper to taste. Stir well to combine.
- Simmer the mango sauce for about 10-15 minutes, stirring occasionally, until the mangoes are soft and the sauce has thickened slightly.
- Once cooked, remove the saucepan from heat and set aside. Allow the sauce to cool slightly before serving.
- Fry the Lapu-Lapu:
- Pat the Lapu-Lapu fillets dry with paper towels to remove excess moisture.
- Season the fish fillets with salt and pepper to taste.
- Place the all-purpose flour in a shallow dish. Dredge each fish fillet in the flour, shaking off any excess.
- In a large skillet or frying pan, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.
- Once the oil is hot, carefully add the fish fillets to the skillet in batches, making sure not to overcrowd the pan. Fry the fish for about 3-4 minutes on each side, or until golden brown and crispy.
- Once fried, transfer the fish fillets to a plate lined with paper towels to drain any excess oil.
- Serve:
- Arrange the fried Lapu-Lapu fillets on a serving platter.
- Drizzle the prepared mango sauce over the fish or serve it on the side as a dipping sauce.
- Garnish with lemon wedges.
- Serve hot with steamed rice and your favorite side dishes.
