Fruit Gelatin Parfait Recipe

Ingredients:

  • 1 packet (about 7g) unflavored gelatin
  • 1 cup fruit juice (such as orange, apple, or pineapple)
  • Mixed fresh fruits (such as berries, kiwi, mango), diced
  • Greek yogurt or coconut yogurt
  • Honey or maple syrup (optional, for sweetness)
  • Granola or toasted nuts for topping

Instructions:

  1. In a small saucepan, sprinkle gelatin over fruit juice and let it sit for a few minutes to bloom.
  2. Heat the saucepan over low heat, stirring constantly until the gelatin completely dissolves.
  3. Remove from heat and let it cool slightly.
  4. Pour a thin layer of the gelatin mixture into serving glasses or jars.
  5. Add a layer of diced mixed fruits over the gelatin.
  6. Pour another layer of the gelatin mixture over the fruits.
  7. Refrigerate for at least 2 hours, or until set.
  8. Once set, layer with Greek yogurt or coconut yogurt.
  9. Top with more diced fruits, honey or maple syrup (if using), and granola or toasted nuts.
