Ingredients:
- 1 packet (about 7g) unflavored gelatin
- 1 cup fruit juice (such as orange, apple, or pineapple)
- Mixed fresh fruits (such as berries, kiwi, mango), diced
- Greek yogurt or coconut yogurt
- Honey or maple syrup (optional, for sweetness)
- Granola or toasted nuts for topping
- In a small saucepan, sprinkle gelatin over fruit juice and let it sit for a few minutes to bloom.
- Heat the saucepan over low heat, stirring constantly until the gelatin completely dissolves.
- Remove from heat and let it cool slightly.
- Pour a thin layer of the gelatin mixture into serving glasses or jars.
- Add a layer of diced mixed fruits over the gelatin.
- Pour another layer of the gelatin mixture over the fruits.
- Refrigerate for at least 2 hours, or until set.
- Once set, layer with Greek yogurt or coconut yogurt.
- Top with more diced fruits, honey or maple syrup (if using), and granola or toasted nuts.
